Another day in the neighborhood

Howdy folks. Today was a busy f'ing day for me again. I got up this a.m. and got my grade on my exam from yesterday morning. I got an "A" so I'm pretty happy about that...then I ran on the treadmill. J finally got up then and I decided to take a shower. We then ran to his dad's to drop off a birthday gift and then had lunch at Rotelli for a gorgonzola salad. yummmm

Then we ran and spent a fortune at the grocery store and came back home. Thankfully, when I got home I was able to sit and relax with Miss Kira for a while. Then I made dinner for J and Andrew. I decided to take it easy and make my delicious yet EASY Beef Burgundy...
Beef Burgundy

1 ½ lbs boneless sirloin steak (or cubed beef)
2 T margarine or butter
1 med. Onion, finely chopped (about ½ cup)
1/3 cup all-purpose flour
2 tsp chopped fresh or ½ tsp dried thyme
½ cup dry red wine
1 can (10.5 oz) condensed beef broth
½ tsp salt
½ package (16 oz size) frozen sm. whole onions (optional)
½ to 1 lb mushrooms (halved)

1. Trim fat from beef steak. Cut beef into ¾ inch pieces
2. Place margarine and chopped onion in 3 qt. casserole. Cover tightly and microwave on high 3-4 minutes or until onion is soft. Stir in flour and beef. Cover and microwave 6-8 minutes, stirring after 4 minutes, until outside of beef is no longer pink.
3. Stir in remaining ingredients except mushrooms. Cover tightly and microwave 12-16 minutes, stirring every 5 minutes, until slightly thickened and boiling. Stir in mushrooms.
4. Cover tightly and microwave on medium (50%) 8-10 minutes, stirring after 4 minutes, until beef is tender. Serve w/ hot cooked noodles, rice, or French bread.

Then we sat and watched Relax...It's Just Sex

Right now, though, I'm just chilling w/ the kitty on the couch. Fun huh?

Oh, I forgot to check in about yesterday...'twas busy as well... we went to dinner w/ sis, don, holly, david, and two other people ;-)...I made the dean's list...and I ran on the treadmill. Just not in that order...You figure it out!
