Strawberry Daiquiri Shortcake
(a.k.a. Drunken Strawberry Shortcake)
(a.k.a. Some Damn Dessert that I Made Up on the Fly)

4 cups strawberries, sliced
1/2 cup sugar
1/4 cup rum
4 Shortcakes
Healthy Choice Ice Cream - Vanilla
Lite Cool Whip
Combine strawberries and sugar. Put 1 cup of the mixture in food processor, puree w/ rum. Stir puree back into strawberry mixture. Refridgerate. Place shortcake in bottom of bowl. Add 1 scoop of ice cream, and approx 1 cup of strawberry mixture. Top w/ cool whip. Serves 4. :) YUMM!!!
